Low-carb White chocolate macadamia nut cookies

To be honest, I am not a cookie person, but I do like White Chocolate Chip Macadamia Nut Cookies, I mean who doesn't?!


So obviously I had to create a recipe that will fit into our healthy lifestyle. Nonmatter if you are Low-carb, Sugar-free, Gluten-free, Paleo, Keto, Whole30 or you do not follow any diet at all you will definitely like this healthier version of the all time favorite cookie. After all it has the approval of my sweet-tooth-health-freak boyfriend. ;)



Here is the recipe:

  • 3 eggs

  • 1/2 cup of melted grass-fed butter or coconut oil

  • 2 tsp vanilla

  • 1 1/2 cups of almond flour

  • 1 scoop of Paleo Pro Protein Powder Aztec Vanilla

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 tsp monk fruit powder

  • 2/3 cup Lilly's Sugar Free White Chocolate Chips

  • 1/2 cup macadamia nuts




Instructions:

  1. Preheat oven to 350 F.

  2. In a bowl mix eggs, melted butter, vanilla.

  3. In a separate bowl, combine the dry ingredients: almond flour, protein powder, baking soda, baking powder, salt, monk fruit.

  4. Mix dry ingredients into the wet until you form a dough.

  5. Fold in chopped macadamia nuts and 1/2cup of white chocolate chips ( leave the rest for the top).

  6. Scoop dollops of dough onto a baking sheet lined with parchment paper.

  7. Put the rest of the white chocolate chips on top of the cookies.

  8. Bake 12-14 minutes




9 .Remove from oven and cool the cookies on a baking rack for 15 min.

10. Enjoy and try not to eat all of them!!!


The recipe yields 19-20 low carb chocolate macadamia nut cookies.
